Bake An Old-Fashioned Pone With Provision And Coconut

Pone is usually a gift from grandmas and aunties who have perfected their recipe over years. This recipe is tried-and-true from our Nani. With copious amounts of butter, the love of ground provision and yummy pumpkin, you’re sure to have a deliciously decadent piece of pone.

INGREDIENTS
  • 4 pounds cassava 
  • 1 pound pumpkin 
  • 1 large, yellow sweet potato  
  • 1 dried coconut 
  • 8 tablespoons butter  
  • 8 tablespoons lard 
  • 1 teaspoon black pepper 
  • 1 teaspoon nutmeg 
  • 3 cups granulated sugar 
  • ½-395 gram tin condensed milk  
  • 1 cup evaporated milk 
  • 2 tablespoons mixed essence  
  • 2 cups granulated sugar Raisins, optional
DIRECTIONS
  1. Peel pumpkin, sweet potato, cassava and coconut. Then, grate or grind in a food processor.
  2. Add remaining ingredients; mix well.
  3. Grease dish well and then, pour mixture into dish.
  4. Bake at 350°F for one hour.
  5. Use a skewer or toothpick to test. If it comes up clean, pone is done baking.
  6. Let cool. Cut and serve.
