Bake Oats And Nuts For Yummy, Gourmet Granola

GOURMET GRANOLA

Granola is one of those healthy snacks that looks easy enough to make, but is even easier to drop some serious coin on at the grocery, market or gourmet shop. It can seem ‘super healthy’ but have excessive refined sugar hidden within fancy packaging. I enjoy making my granola, as I control the sweetness and throw in my favourite nuts, seeds and fruits. With the right base recipe, granola can be tailored suit all personal preferences.

Yields: 12 Servings

Total Time: 35 mins

INGREDIENTS
  • ½ cup vegetable oil or coconut oil 
  • ½ cup honey  
  • ½ teaspoon ground cinnamon  
  • ½ teaspoon salt  
  • 4 cups old-fashioned rolled oats  
  • 1 cup of dried fruit* 
  • 1 cup worth of ‘add-ins’**

*Dried fruit: papaya, pineapple, dates cranberries, raisins

**Add-ins: Almonds, cashews, peanuts, flax seeds, chia seeds, shredded coconut, sunflower seeds, pumpkin seeds, banana chips, pecans, walnuts

DIRECTIONS
  1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together oil, honey, cinnamon, and salt.
  3. Add the oats and choice of ‘add-in’ to the honey mixture; stir to coat.
  4. Spread the oats onto the prepared baking sheet.
  5. Bake for 10 minutes; remove from oven, toss and bake for 10 minutes.
  6. Remove from the oven, add dried fruit and cool.
  7. Store in an airtight container in the refrigerator or freeze.
