WATERMELON-GINGER SPRITZ

Take advantage of the beautiful watermelons that grace fruit stalls and trucks all over Trinidad and Tobago. Our Watermelon-Ginger Spritz is a kid-friendly, refreshing drink with a hint of fizziness that skimps on the calories but not on the deliciousness (it’s the perfect alternative to sugary soda). This fruity drink is great for a cool down during our very hot dry season or for some much-needed rehydration after a night out. We blend the drink with mint for an extra crisp note and ginger for an added dimension of flavour.

This drink can easily be made into a grown-up cocktail by adding a splash of vodka or gin and then topping it off with sparkling water for effervescence.

INGREDIENTS
 4 cups chopped watermelon*
 5-inches ginger root, peeled
 4 sprigs mint
 ¾ cup water
 1 cup ice
 2 cups sparkling water
 2 tablespoons honey

*Don't bother to remove the watermelon seeds, they're good for you!

DIRECTIONS

In a blender, add all ingredients except sparkling water. Blend on high until smooth, about 45 seconds.

Serve chilled. Garnish with a sprig of mint.
