Make Bacon, Cheddar & Chive Scones This Valentine’s Day

BACON, CHEDDAR & CHIVE SCONES
These eggless, savoury scones are perfect for a surprise romantic breakfast or as a yummy treat for your loved one. Use heart-shaped cutters if you want to be extra cheesy and loving this Valentine’s Day.

INGREDIENTS
- 2 cups all-purpose flour
- ½ teaspoon salt
- 1 tablespoon baking powder
- 2 teaspoons sugar
- 1 teaspoon ground thyme
- 2 teaspoons paprika
- 1 teaspoon black pepper
- 2 ounces cold butter, cubed
- 1 cup grated cheddar cheese
- ⅓ cup finely chopped fresh chives
- 1 cup cooked, crumbled bacon, optional
- ¾ cup to 1 cup heavy cream
DIRECTIONS
- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- In a large bowl, whisk all dry ingredients.
- Using a dough cutter, food processor or your hands, work the cubed butter into the dry ingredients until it becomes crumbly.
- Then, mix in cheese, chives and bacon.
- Add ¾ cup heavy cream; stir to combine. If the dough does not hold together, add cream until it does.
- Transfer the dough to a baking sheet with parchment paper or a Silpat and press the dough into a ¾-inch thick circle.
- Using a sharp knife, cut the circle into wedges, spreading them apart.
- Lastly, brush with heavy cream.
- Bake for 22 to 24 mins or, until golden-brown. Serve warm.
