Ginger Beer Is The Refreshing Drink You Need On Christmas Day

Ginger beer is one of the three holy grail drinks for Christmas. The burn of ginger, spice of clove and effervescence of soda makes this both refreshing and warming for the a tropical Christmas. Serve over ice with a piece of pastelle pie for a perfect lunch.

GINGER BEER

Yields: 12 Servings

Total Time: 20 mins

INGREDIENTS
  • 1 pound ginger, grated 
  • 4 cups granulated sugar 
  • 10 cloves 
  • 4 inches dried orange peel  
  • ½ teaspoon cream of tartar*  
  • 3 bottles club sodas 
  • 3 litres water
DIRECTIONS
  1. Add 1 ½ litres water to a large stock pot. Then, add ginger, cloves, orange peel and cream of tartar.
  2. Leave to soak overnight.
  3. The following day, add sugar, remaining water and club sodas.
  4. Mix well and strain, pressing the ginger with the back of a spoon to ensure all of the juice is pressed out.
  5. Chill and serve.
