Rocky road is not just for ice-cream. Chunks of marshmallows and peanuts make this chocolate fudge utterly irresistible. It is chewy, in the best way possible, and melt in your mouth delicious. The peanuts add crunch while the marshmallows add fluffiness making this the most exciting and yummiest fudge you’ll ever eat.

DAIRY DAIRY ROCKY ROAD FUDGE

Yields: 12 Servings

Total Time: 40 mins

INGREDIENTS
  • 3 cups sugar 
  • ⅔ cup unsweetened cocoa  
  • ⅛ teaspoon salt 
  • ¾ cup Dairy Dairy Full Cream Milk Powder 
  • 1 ½ cups water 
  • ¼ cup butter 
  • 1 teaspoon vanilla 
  • 1 ½ cup peanuts, roasted 
  • 1 ½ cups mini marshmallows
DIRECTIONS
  1. Line an 8-inch square pan with parchment paper and grease.
  2. In a medium-heavy saucepan stir sugar, cocoa and salt then, add the Dairy Dairy Full Cream Milk Powder and water. Mix with a wooden spoon until combined.
  3. Over medium-heat, stir the fudge mixture continuously until it starts to rapidly boil.
  4. Turn down heat to low and continue to cook without stirring until temperature reaches 234°F. Use a candy/oil thermometer to measure this.
  5. Remove pot from heat; add the butter and vanilla. Do not stir. Allow to cool to room temperature (110°F). Beat with a wooden spoon until the mixture begins to lose its glossiness, about 5 to 7 minutes.
  6. Quickly spread half of the batter into the pan. Top with peanuts and marshmallows and then pour the remaining batter. Let cool completely. Cut into squares, serve and enjoy.
  7. If not using immediately, you can store the fudge in an airtight container or freeze.
