MEXICAN ELOTE

Yields: 6 Servings

Total Time: 40 mins

INGREDIENTS
  • 4 whole sweet corn 
  • 12 skewers 
  • ½ cup mayonnaise 
  • ½ cup sour cream 
  • ½ cup crumbled feta cheese  
  • 1 teaspoon chili powder 
  • 4 chadon beni leaves, chopped 
  • 1 pack of your favourite cheesy/spicy chips, crushed 
  • 2 limes, wedged
DIRECTIONS
  1. Cut each corn into thirds and pierce each with a skewer at its base.
  2. Place the corn into a large pot of boiling water and cook until tender, about 20 to 30 minutes and then drain.
  3. In a small bowl, mix the mayonnaise and sour cream together. Slather this mixture over the sides of each corn.
  4. Sprinkle the corn with feta, chili powder, chadon beni and crushed chips.
  5. Serve with squeezed lime and enjoy!
