MEXICAN ELOTE

INGREDIENTS

 4 whole sweet corn
 12 skewers
 ½ cup mayonnaise
 ½ cup sour cream
 ½ cup crumbled feta cheese
 1 teaspoon chili powder
 4 chadon beni leaves, chopped
 1 pack of your favourite cheesy/spicy chips, crushed
 2 limes, wedged

DIRECTIONS

Cut each corn into thirds and pierce each with a skewer at its base.

Place the corn into a large pot of boiling water and cook until tender, about 20 to 30 minutes and then drain.

In a small bowl, mix the mayonnaise and sour cream together. Slather this mixture over the sides of each corn.

Sprinkle the corn with feta, chili powder, chadon beni and crushed chips.

5

Serve with squeezed lime and enjoy!
