Ham + Cheese Roll Ups

No matter how many people you entertain for Christmas and how hungry they are, you’ll always find yourself with leftover ham. Once the holidays are over, these ham and cheese pinwheels will put the ham in your fridge to good use. The soft, yeasty rolls are filled with freshly baked ham, piles of cheddar cheese and your favourite condiments ketchup and mustard.

INGREDIENTS
  •  Oil for greasing
  •  2 tablespoons cornmeal 
  • 1 bottle Ginseng Up Apple
  • For the dough:
    •  1 cup warm water 
    • 1 envelope dry yeast 
    • 3 1⁄2 to 4 cups all-purpose flour 
    • 1 teaspoon sugar 
    • 2 teaspoons salt 
    • 2 tablespoons oil
  • For the filling:
    • 1⁄2 cup ketchup 
    • 1⁄4 cup mustard 
    • 1 1⁄2 cups leftover ham, chopped into small pieces 
    • 1 1⁄2 cup shredded cheddar cheese
DIRECTIONS
  1. Grease a large baking sheet generously with oil and then sprinkle with a little cornstarch.
  2. In small bowl, empty the envelope of yeast into warm water. Allow to stand for 5 minutes until dissolved.
  3. In a medium bowl, add the remaining dough ingredients: Flour, sugar, salt and oil.
  4. Add the yeast mixture to the flour mix and stir using your hand until combined.
  5. Place the dough on a floured surface and knead for about 10 minutes, adding more flour if necessary. The dough should be soft but should not stick to your hands or the table.
  6. Shape the dough into a ball and place in a clean, greased bowl. Cover with plastic wrap, place in warm area. Allow to rise one hour, or until doubled in size.
  7. Preheat the oven to 350°F.
  8. When the dough has doubled, punch down and place onto a floured surface. Using a rolling pin, roll into a rectangle shape about 1/3- to 1/4-inch thick.
  9. Spread the ketchup and mustard all over the dough and top with ham and cheese. Roll lengthways, pinching the ends shut.
  10. Carefully slide a piece of thread or unflavoured floss under the dough, then pull tightly on its ends, crossing over the dough, so it cuts 15 to 18 even rolls.
  11. Place onto the prepared baking sheet about 2 inches apart. Allow to rest 10 minutes.
  12. Bake at 350°F for 30 to 40 minutes, or until golden brown.
  13. Crack open a Ginseng Up Apple and eat while it’s still hot.
