Butter is your key to a fabulous sauce, roasted chicken, sandwich and dessert. Without much effort and a little bit of butter, quick weeknight meals and even desserts can be made without a skimp on flavour. Here are easy ways that butter can be your key to gourmet weeknight dinners.
#1 Pasta Sauce, 7 minutes
A butter sauce for pasta can be made in less than 10 minutes (which is less than it takes for pasta to cook through!). Simply, sauté butter with garlic and toss your cooked pasta in it. Next, season with salt, black pepper and chilli flakes. Add your chopped fresh herbs at the end to prevent wilting and overcooking and to include a burst of freshness. This is just a flavour profile suggestion however, many other seasonings can be included such as onion, olives, pimentos and lemon zest.
#2 Compound Butter, 10 minutes
Compound butter may sound fancy but chances are that you have already made it. If you ever made garlic bread, then you have made compound butter. It is basically butter that has been whipped with seasonings, reformed, chilled and sliced to top meats and breads. We suggest making your compound butter on a weekend so all that is left to do during your hectic week is just slice and add to your meals. Cook a simple piece of fish, chicken or beef (we’re talking just salt and pepper and baked or pan seared to save time) and let the compound butter do the work for you. Whatever herbs and spices you have used in your compound butter will intensify as it is refrigerated and then bleed onto your meat when topped. Your dish will never taste like it took you a whole 10 minutes to prepare.
#3 Crumble, 15 minutes
Any type of fruit crumble is quick to assemble, stick in the oven and forget. A crumble topping consists of oats, flour, sugar, cinnamon and melted butter. Mix to combine, spoon over chopped fruit and bake. This can be done with most fruits like apples, mangoes and pineapples. The prep shouldn’t take more than 15 minutes and even though baking time is 40 to 45 minutes, you can do a million other things while it bakes.
Besides a traditional crumble, the actual crumble topping can be used over ice-cream and fruit (if you didn’t feel like doing the whole mile).
