LIME BARS

I’m one of the many Trinbagonians blessed enough to have a lime tree in my backyard. I do not take this blessing for granted. Aside from margaritas, mango chow and fish garnish, I use my limes to make these lime bars. If you love shortbread cookies and tart desserts, this is the snack for you!

INGREDIENTS
  • For the shortbread crust:
    • 8 ounces unsalted butter, softened 
    • ½ cup granulated sugar  
    • 2 cups all-purpose flour
  • For the lime filling:
    • 4 eggs, room temperature  
    • 1 ½ cups granulated sugar  
    • ¼ cup all–purpose flour  
    • 4 limes, juiced
  • For the garnish:
    • ¼ cup of icing sugar 
    • Basil, sage or mint leaves (optional)
DIRECTIONS
  1. Preheat oven to 350°F. Prepare a 9-inch x 13-inch pan by lining with wax paper and greasing it with butter or non-stick baking spray.
  2. In a medium bowl, blend together butter, 2 cups flour and ½ cup sugar.
  3. Bake for 15 to 20 minutes in the preheated oven, or golden-brown. Allow to cool completely.
  4. In a separate bowl, whisk together the remaining 1½ cups sugar, eggs and lime juice. Sift ¼ cup of flour into bowl and whisk in until dissolved.
  5. Pour filling into crust.
  6. Bake for 20 minutes in the preheated oven.
  7. Allow to cool completely. Once cool, cut into 2-inch squares.
  8. Top bars with sifted icing sugar and fresh herbs.
