Toss Your Wings in Geera for a Bomb Appetiser
Wings are a staple at any game day party. They’re the perfect hand-held snack that pleases just about everyone. We’ve married a Trini classic, geera chicken, with the popular appetiser and created suck-the-bone-it’s-so-good wings. They are salty, earthy and spicy. Dunked in our limey garlic sauce, you’ll wonder where these have been your entire life.
GEERA WINGS WITH GARLIC SAUCE

INGREDIENTS
- 2 pounds chicken wings
- 3 tablespoons ground geera
- 2 tablespoon amchar masala
- 1 tablespoon garlic powder
- Salt and black pepper
- Oil
- For the sauce:
- 1 lime, juiced
- 1 small bundle chadon beni, chopped
- 3 cloves garlic, grated
- ½ teaspoon sugar
- 1 cup mayonnaise
- ⅓ cup water
- Pepper sauce Salt
DIRECTIONS
- Clean and wash wings. Cut wings in half and pat dry with a paper towel.
- Heat oil to 350°F or medium high heat. In a large bowl, add wings, geera, amchar masala, garlic powder, salt and pepper and toss until evenly coated. Cover with plastic wrap and marinate for 30 minutes.
- In a medium bowl add lime juice, chadon beni, grated garlic, sugar, mayo and water. Mix until well combined. Add salt and pepper sauce to taste.
- Fry your wings in batches until the they are cooked all the way through, about 10 minutes. Place the wings on a paper towel lined plate.
- Serve warm with garlic sauce on the side.
