Toss Your Wings in Geera for a Bomb Appetiser

Wings are a staple at any game day party. They’re the perfect hand-held snack that pleases just about everyone. We’ve married a Trini classic, geera chicken, with the popular appetiser and created suck-the-bone-it’s-so-good wings. They are salty, earthy and spicy. Dunked in our limey garlic sauce, you’ll wonder where these have been your entire life.

These fall-off-the-bone wings are perfect for watching World Cup games from the comfort of your couch. But keep napkins close by because things will get messy!

GEERA WINGS WITH GARLIC SAUCE

INGREDIENTS
  • 2 pounds chicken wings 
  • 3 tablespoons ground geera 
  • 2 tablespoon amchar masala 
  • 1 tablespoon garlic powder 
  • Salt and black pepper  
  • Oil
  • For the sauce: 
    • 1 lime, juiced  
    • 1 small bundle chadon beni, chopped 
    • 3 cloves garlic, grated  
    • ½ teaspoon sugar  
    • 1 cup mayonnaise 
    • ⅓ cup water  
    • Pepper sauce Salt
DIRECTIONS
  • Clean and wash wings. Cut wings in half and pat dry with a paper towel.
  • Heat oil to 350°F or medium high heat. In a large bowl, add wings, geera, amchar masala, garlic powder, salt and pepper and toss until evenly coated. Cover with plastic wrap and marinate for 30 minutes.
  • In a medium bowl add lime juice, chadon beni, grated garlic, sugar, mayo and water. Mix until well combined. Add salt and pepper sauce to taste.
  • Fry your wings in batches until the they are cooked all the way through, about 10 minutes. Place the wings on a paper towel lined plate.
  • Serve warm with garlic sauce on the side.
